Interview 5/6: Tasting the Transformation (Greece)
The “Tasting the Transformation” pilot initiated by AUTH Medical Physics and Digital Innovation Lab redefines food consumption through sustainability and mindfulness, turning meals into eco-conscious, meaningful experiences. Led by a multidisciplinary team, the initiative intends to build a short food supply chain with local organic producers, food services, and NGOs to reduce waste and promote healthy, sustainable eating. Utilizing the “Appetite Framework,” and the “Farm to Fork Strategy”, it fosters community engagement by integrating mindfulness, sustainability, and Mediterranean culinary traditions. Nurturing social impact, the remaining food will be distributed to vulnerable groups, promoting eco-friendly practices and supporting the local economy.
The “Tasting the Transformation” pilot is in its final preparatory phase, a key step toward fostering a mindful, sustainable food culture. Collaborating with the Municipality of Thessaloniki, AUTH’s team is finalizing participant selection and intervention protocols tailored to local needs. This initiative blends mindfulness with sustainability, encouraging deep engagement with eco-conscious eating and cultural appreciation. As the project launches, real-time monitoring will assess its impact on individual behaviors and community attitudes toward food sustainability. AUTH’s team aims to inspire lasting, positive changes, promoting eco-friendly lifestyles and a sustainable future.
